MABI’S HOMEMADE BLACK BEAN VEGGIE BURGER INGREDIENTS: 4 cups cooked & drained black beans in blender (or 4 cups beans/ veggie combo) 1 small onion & 3-4 garlic cloves in blender 1 cup veggie or meat broth in blender* 1 tsp. cayenne pepper 1 tsp. oregano 1 tsp. salt 3-4 tbsps. BBQ sauce 1+ cup whole wheat or quinoa flour3/4 cup oats 1+ cup whole wheat flour 3/4 cup oats 1+ cup whole wheat flour *I made quick from-scratch veggie broth for the TVP V.B.) & used broth/ veggies in burger mix. (10 min. prep) COOKING: Mix all pureed items together. Taste & adjust seasoning. Fry in olive oil until browned. Melt your favorite cheese on top (optional). Et, voila... Makes 12 veggie burgers. Total prep/ cooking time: 1 hour This is an option to the above recipe that permits you to add oats or other grains Make-ahead quick veggie broth: Boil for 10 minutes… water, 2 garlic cloves, chopped onion & veggies, salt/ pepper, olive oil COOKING: 1. Mix all pureed items together. 2. Add the flour last. Mix in gradually until the mixture is very thick and sticky. 3. Season, taste, & adjust seasoning. 4. Fry in olive oil until browned on both sides. 5. Melt your favorite cheese into burger (optional). YIELD: Makes 20-22 burgers PREP / COOKING TIME: 1 hour
