MABI’S HOMEMADE BLACK BEAN VEGGIE BURGER
INGREDIENTS:
4 cups cooked & drained black beans in blender (or 4 cups beans/ veggie combo)
1 small onion & 3-4 garlic cloves in blender
1 cup veggie or meat broth in blender**
1 tsp. cayenne pepper
1 tsp. oregano
1 tsp. salt
3-4 tbsps. BBQ sauce
1+ cup whole wheat or quinoa flour
optional you can add oats
**Make-ahead quick veggie broth: Boil for 10 minutes… water, 2 garlic cloves, chopped onion & veggies, salt/ pepper, olive oil
COOKING:
1. Mix all pureed items together.
2. Add the flour last. Mix in gradually until the mixture is very thick and sticky.
3. Season, taste, & adjust seasoning.
4. Fry in olive oil until browned on both sides.
5. Melt your favorite cheese into burger (optional).
YIELD: Makes 20-22 burgers
