Mabi’s Whole Wheat Kefir Scones I’m always experimenting with delicious and nutritious ways to feed my family – especially my finicky young ones. These scones turned out as light and crumbly as white flour scones. Enjoy! DRY INGREDIENTS: · 1 cup whole wheat bread flour · 2/3 cup whole wheat pastry flour · 1/3 cup gluten · 1 ½ tsps. baking powder · ½ tsp. baking soda · ¼ tsp. salt · 6 tbsp. unsalted butter, chilled WET INGREDIENTS: · ½ cup plain lowfat kefir yogurt (or substitute with buttermilk) · 1/3 cup agave nectar · 1 large egg · 2 tsps. vanilla extract OPTIONAL INGREDIENTS: · 2/3 cup raisins, craisins, currants, etc. (optional) · Nuts INSTRUCTIONS: 1. Preheat oven to 400F. 2. Mix all dry ingredients together, except for butter. 3. Now, add chilled butter and blend in with pastry blender (or knife) until mixture looks crumbly. 4. Mix wet ingredients together in separate bowl and then add mixture to dry ingredients. 5. Mix all ingredients together with a fork until well blended. 6. Flour the surface of a baking stone. 7. Spoon out scone mixture (2 inch diameter, approximately) onto baking stone. 8. Or, roll out dough onto floured surface and use cookie cutter/ knife for evenly bordered scones. 9. Bake 18 minutes or until scone tops begin to golden. 10. Remove from oven and place on a plate. Do not cover scones if they are still warm. 11. Enjoy warm with butter and/ or fruit preserves. 12. This recipe yields approximately 12-16 scones.
