Creamy Corn Soup

Ingredients:

  • 4 ears of corn

  • 2 small onions or 1 medium

  • 5-6 cloves garlic

  • 3 tablespoons olive oil

  • 3 cups water

  • Salt and pepper to taste

  • Fresh basil to garnish


Instructions:

  • In a pot, heat oil then saute onions and garlic until soft

  • Salt, pepper as desired

  • Add corn, saute for a few minutes

  • Add water, stir then let simmer at least 20-30 mins

  • Puree in blender until desired consistency

  • Salt and pepper again to taste, then garnish with fresh basil leaves
