Baked Rice & Roasted Tomatoes

Ingredients:
- 2-3 cups cherry tomatoes, or diced tomatoes 
- 5-6 cloves garlic, whole 
- 1 medium onion, roughly chopped 
- ½ cup cilantro stems 
- 1 tablespoon olive oil 
- 1 teaspoon herbes de provence, or fresh thyme 
- 1 cup basmati rice or rice pilaf 
- 2 cups boiling water 
- Salt and pepper to taste 
- Fresh cilantro leaves for garnish 
Instructions:
- Preheat oven 400ºF 
- Cover bottom of baking dish with tomatoes, onion, garlic. Toss veg with olive oil, salt and pepper 
- Roast in oven for 25-30 mins 
- Take out the baking dish, add the rice and hot water, cover with foil 
- Return dish to oven, increase temp to 425ºF and bake for 25 mins covered. 
- Uncover, add fresh cilantro to rice and serve warm
