For the salmon:
1 whole salmon filet, thawed
1 cup cherry tomatoes
2 tablespoons olive oil
2 tablespoons dijon mustard
2 tablespoons capers with its juice
Juice of one lime or lemon
¼ cup chopped basil or other fresh herbs
Salt and pepper to taste
Instructions:
Put thawed salmon filet in a baking pan
Combine the last 6 ingredients to make a marinade, pour over salmon
Add cherry tomatoes - let sit for 15-20 minutes (can be longer if put in refrigerator)
Cover pan with foil, and bake salmon at 350ºF for 30 minutes
For the egg noodles with zucchini:
Chop zucchini into small chunks
Cook noodles as instructed
Add zucchini to cook the last minute
Drain pasta/zucchini
Toss with pesto and enjoy with a portion of baked salmon
