Baked Spaghetti Squash with Cabbage and Onions

Ingredients:

  • 1 medium spaghetti squash

  • 1 medium onion, sliced

  • 2-3 cloves garlic, minced

  • 2 cups chopped cabbage

  • 1 tablespoon olive or avocado oil

  • 1-2 tablespoons balsamic vinegar

  • Salt and pepper to taste

  • Grated cheese (optional)

Instructions:

  • Half the squash, take out the seeds, bake at 400ºF for 45 mins

  • While squash is roasting, saute cabbage/onion/garlic in oil and balsamic vinegar until nicely brown and caramelized

  • Add cooked squash to the cabbage, mix well

  • Transfer mixture back to squash shells

  • Sprinkle cheese on top and bake until cheese is melted, about 5 mins
