Baked Spaghetti Squash with Cabbage and Onions

Ingredients:
- 1 medium spaghetti squash 
- 1 medium onion, sliced 
- 2-3 cloves garlic, minced 
- 2 cups chopped cabbage 
- 1 tablespoon olive or avocado oil 
- 1-2 tablespoons balsamic vinegar 
- Salt and pepper to taste 
- Grated cheese (optional) 
Instructions:
- Half the squash, take out the seeds, bake at 400ºF for 45 mins 
- While squash is roasting, saute cabbage/onion/garlic in oil and balsamic vinegar until nicely brown and caramelized 
- Add cooked squash to the cabbage, mix well 
- Transfer mixture back to squash shells 
- Sprinkle cheese on top and bake until cheese is melted, about 5 mins
