Baked Whole Cauliflower

Ingredients:

  • One whole cauliflower

  • 2 tablespoons olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon maple syrup

  • 2 cloves garlic, chopped

  • one handful cilantro, chopped

  • grated parmesan cheese

  • red chili flakes (optional)


Instructions:

  • Preheat oven at 400ºF

  • Cut bottom of cauliflower (leafs and hard stem parts), place in oven save pot (with lid)

  • Make the vinaigrette with the rest of the ingredients (without the cheese)

  • With the cauliflower bottom side up, pour in about half of the vinaigrette

  • Turn the cauliflower right side up, baste the top with more vinaigrette

  • Bake cauliflower for 30 minutes

  • Open lid, pour grated parmesan cheese on top

  • Continue to bake another 20 minutes or until the cauliflower is cooked through (test with fork or knife)
