Baked Whole Cauliflower

Ingredients:
- One whole cauliflower 
- 2 tablespoons olive oil 
- 2 tablespoons apple cider vinegar 
- 1 tablespoon Dijon mustard 
- 1 tablespoon maple syrup 
- 2 cloves garlic, chopped 
- one handful cilantro, chopped 
- grated parmesan cheese 
- red chili flakes (optional) 
Instructions:
- Preheat oven at 400ºF 
- Cut bottom of cauliflower (leafs and hard stem parts), place in oven save pot (with lid) 
- Make the vinaigrette with the rest of the ingredients (without the cheese) 
- With the cauliflower bottom side up, pour in about half of the vinaigrette 
- Turn the cauliflower right side up, baste the top with more vinaigrette 
- Bake cauliflower for 30 minutes 
- Open lid, pour grated parmesan cheese on top 
- Continue to bake another 20 minutes or until the cauliflower is cooked through (test with fork or knife)
