Beet-Lentil Veggie Burger

  • ½ cup oats (rolled or quick)

  • ½ cup flour (regular or gluten free)

  • ½ cup cooked lentils

  • 2 cups grated beets and/ or carrots

  • 1 Tablespoon natural peanut butter 

  • ¼ cup onion, roughly chopped

  • 1 teaspoon salt / pepper to taste


  • Process everything in a food processor 

  • Form patties with your hands (about ½ inch thick)

  • Cook on heated pan/ griddle, about 2 minutes per side, or until done

This recipe is vegan. It can be gluten free and nut free if substituted with gluten free flour, and seed butter.
