Beet-Lentil Veggie Burger

½ cup oats (rolled or quick)
½ cup flour (regular or gluten free)
½ cup cooked lentils
2 cups grated beets and/ or carrots
1 Tablespoon natural peanut butter
¼ cup onion, roughly chopped
1 teaspoon salt / pepper to taste
Process everything in a food processor
Form patties with your hands (about ½ inch thick)
Cook on heated pan/ griddle, about 2 minutes per side, or until done
This recipe is vegan. It can be gluten free and nut free if substituted with gluten free flour, and seed butter.
