Ingredients:
½ cup dried black lentils
3 cloves garlic
½ chopped onion
2 inches fresh ginger (minced)
1 cup tomatoes, chopped (or canned)
Salt/ Pepper to taste
½ teaspoon each of ground coriander, ground turmeric, and ground cumin
1 tablespoon olive oil
½ cup fresh cilantro, chopped (optional)
2-3 cups broth or more - depending on your desired thickness
Instructions:
Sauté garlic, onions, ginger in hot oil, add lentils, stir until warm
Add tomatoes and herbs
Pour in broth to cover ingredients
Salt and pepper to taste
Simmer until lentils are soft
Serve warm with a dollop of yogurt, cilantro and rice
