Blueberry Lemon Cobbler

Ingredients:

  • 3 cups fresh blueberries

  • 1 lemon (juice and zest)

  • 1 cup flour

  • 1 cup milk

  • 1 cup sugar

  • 1 teaspoon baking powder

  • ½ cup butter, melted

  • 1 teaspoon ground cinnamon (optional)


Instructions:

  • Preheat oven 350ºF

  • Combine blueberries with lemon juice and zest of one lemon, set aside

  • Pour melted butter into an 8x11 baking pan

  • Combine flour, milk, baking powder, sugar - mix well

  • Pour batter to melted butter

  • Top batter with blueberries and sprinkle with cinnamon if desired

  • Bake 35-45 mins until the batter is golden brown. Serve warm with ice cream!
