Braised Cabbage in Chickpea Curry

Ingredients:
1 tablespoon olive oil
1 medium head of cabbage
½ medium onion, chopped
3 cloves garlic, 2 inches fresh ginger, minced
1 can chickpeas
1 can coconut milk
1 tablespoon thai green curry paste
1 cup tomatoes, chopped (fresh or canned)
Soy sauce
Salt / pepper
Instructions:
Quarter cabbage and brown each side 5 minutes undisturbed in heated pan with oil, set aside
Sauté onion, garlic and ginger in oil, add chickpeas, coconut milk, curry paste and tomatoes. Simmer until onions are soft
Add soy sauce, salt and pepper to taste
