Braised Cabbage in Chickpea Curry

Ingredients:
- 1 tablespoon olive oil 
- 1 medium head of cabbage 
- ½ medium onion, chopped 
- 3 cloves garlic, 2 inches fresh ginger, minced 
- 1 can chickpeas 
- 1 can coconut milk 
- 1 tablespoon thai green curry paste 
- 1 cup tomatoes, chopped (fresh or canned) 
- Soy sauce 
- Salt / pepper 
Instructions:
- Quarter cabbage and brown each side 5 minutes undisturbed in heated pan with oil, set aside 
- Sauté onion, garlic and ginger in oil, add chickpeas, coconut milk, curry paste and tomatoes. Simmer until onions are soft 
- Add soy sauce, salt and pepper to taste
