Braised Cabbage in Chickpea Curry

  • 1 tablespoon olive oil

  • 1 medium head of cabbage

  • ½ medium onion, chopped

  • 3 cloves garlic, 2 inches fresh ginger, minced

  • 1 can chickpeas

  • 1 can coconut milk

  • 1 tablespoon thai green curry paste

  • 1 cup tomatoes, chopped (fresh or canned)

  • Soy sauce

  • Salt / pepper


  • Quarter cabbage and brown each side 5 minutes undisturbed in heated pan with oil, set aside

  • Sauté onion, garlic and ginger in oil, add chickpeas, coconut milk, curry paste and tomatoes. Simmer until onions are soft

  • Add soy sauce, salt and pepper to taste
