Coconut Almond Chocolate Chip Cookies

(gluten free)


  • 2 cups unsweetened coconut flakes

  • 1 cup Almonds

  • ⅔ cup condensed milk

  • ½ cup chocolate chips

  • ½ teaspoon vanilla extract


  • Preheat oven at 325ºF

  • In a food processor, pulse almonds until it becomes flour like (or use almond flour), add coconut flakes and pulse for a few seconds

  • In a bowl, combine coconut flakes, almond meal, condensed milk, chocolate chips and vanilla, mix well

  • Use spoons or scoops dough onto baking sheet

  • Bake about 12 mins or until cookies are nicely brown
