Colorful Winter Salad

Ingredients:

  • 3 cups purple cabbage, thinly sliced

  • 1 can chickpeas, drained (or any beans you like)

  • ½ cup arugula (roughly chopped) - more if you’d like

  • ½ cup cilantro, chopped (or parsley)

  • 1 clove garlic, minced

  • ¼ cup sunflower seeds

  • 4 Medjool dates, chopped

  • ½ cup feta cheese, cubed or crumbled

  • 2 tablespoon olive oil

  • Juice of one lemon

  • 1-2 tablespoons apple cider vinegar

  • Salt/ pepper to taste


Instructions:


  • Mix all ingredients together. Adjust lemon juice, salt and pepper as desired!
