Ingredients:
2 tablespoons olive oil
2 cloves garlic, chopped
½ cup onion, diced
½ cup carrot, diced
½ cup celery, diced
1-2 tablespoons basil or parsley, chopped (or 1 teaspoon dried)
1 tablespoon tomato paste
1 can crushed tomatoes (28oz)
1 can diced tomatoes (14oz)
2-3 cups broth
Salt and pepper to taste
Instructions:
Sauté garlic, onions, carrot and celery in olive oil until tender
Add tomato paste, stir
Add canned tomatoes and broth, stir
Add fresh or dried herbs
Salt and pepper to taste
Allow to simmer for at least 30 minutes
Blend with immersion blender or in a regular blender until smooth
Sprinkle with parmesan cheese and basil if desired
