Eggs over Greens


  • 1 tablespoon oil

  • 1-2 cups of greens (chard, kale, bok choy, spinach, etc)

  • Other veggies you like (mushrooms, peppers, zucchini, etc.)

  • Salt & Pepper to taste 

  • 2 eggs


  • Heat oil in pan

  • Add your veggies and sauté until soft 

  • Make a “bed” of the veggies

  • Put eggs on top

  • Cover until eggs are cooked to your liking 

Serve with your favorite salsa if desired
