Healthy Holiday Muffins

Ingredients:
- 3 very ripe bananas, mashed 
- ½ cup grated carrots 
- 2 eggs 
- ½ cup yogurt 
- ½ cup sugar 
- ½ cup rolled oats 
- ¼ cup oil 
- 1 ¼ cup flour 
- 1 teaspoon baking powder 
- 1 teaspoon baking soda 
- ½ teaspoon salt 
- 1 teaspoon ground cinnamon 
- 1 teaspoon ground ginger 
- ½ cup dried cranberries 
- ½ cup mini chocolate chips (optional) for sprinkles 
Instructions:
- Preheat oven at 350F 
- Mix all ingredients (flour last - don’t over mix) in a stand mixer or by hand in a large mixing bowl 
- Fill muffin tins half way (I use these silicone ones) 
- Bake for 30 mins 
- Makes 12 muffins
