Healthy Holiday Muffins

Ingredients:

  • 3 very ripe bananas, mashed

  • ½ cup grated carrots

  • 2 eggs

  • ½ cup yogurt

  • ½ cup sugar

  • ½ cup rolled oats

  • ¼ cup oil

  • 1 ¼ cup flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground ginger

  • ½ cup dried cranberries

  • ½ cup mini chocolate chips (optional) for sprinkles


Instructions:

  • Preheat oven at 350F

  • Mix all ingredients (flour last - don’t over mix) in a stand mixer or by hand in a large mixing bowl

  • Fill muffin tins half way (I use these silicone ones)

  • Bake for 30 mins

  • Makes 12 muffins
