Indian Spiced Chickpeas with Cooling Yogurt Sauce

Ingredients for the chickpeas
- 1 can chickpeas, drained 
- 1 small purple onion, diced 
- 2-3 small potatoes, diced 
- 2-3 cloves garlic 
- 1 inch fresh ginger, minced 
- A few tomatoes, roughly chopped 
- 1 teaspoon curry powder 
- 1 teaspoon ground coriander 
- 1 teaspoon ground cumin 
- 1 tablespoon ghee or olive oil 
- Salt and pepper 
Ingredients for the yogurt sauce:
- ¾ cup greek yogurt, sour cream or skyr 
- 1 small cucumber, grated 
- A handful of fresh mint and cilantro, chopped 
- 1 garlic clove, minced 
- 1 lemon for juice and zest 
- Salt and pepper 
Instructions:
- Preheat oven at 400F 
- Combine chickpea ingredients in a bowl, toss well 
- Lay on baking pan, spread evenly 
- Roast for 20-30 minutes 
- While waiting for the chickpeas to roast, assemble yogurt sauce in a bowl. Adjust taste as you go. 
- Serve chickpeas on naan or pita bread with a generous helping of yogurt sauce!
