Kale & Sweet Potato Hash


  • ½ small onions, chopped

  • ¼ cup mushrooms, quartered

  • 1 cup kale, chopped

  • ¼ cup japanese sweet potato, cubed

  • 1 tablespoon olive oil 

  • 2 eggs

  • Salt and pepper to taste

  • Water or broth as needed


  • Heat oil in pan

  • Sauté onions, sweet potatoes together until soft (add water and cover for a few minutes)

  • Add the rest of veggies, kale last, stir well

  • Salt and pepper to taste

  • Make two small holes in pan

  • Crack an egg in each hole, cover with lid until eggs are cooked as desired

Garnish with salsa, avocado, and/or sour cream. Enjoy alone or a piece of toast!
