1 cup peeled whole shrimp
1 tablespoon sesame oil
1 tablespoon chopped garlic and fresh ginger
1 tablespoon soy sauce or coconut aminos
Purple cabbage, grated about ½ cup
Carrots, grated about ½ cup
Kohlrabi, grated about ½ cup
½ cup cilantro, chopped
1-2 cup kelp noodles
2 Tablespoons Thai Peanut Dipping Sauce
2-3 tablespoon lime juice
Pepper to taste
Soak kelp noodles in warm water for about 10 minutes
Sauté shrimp with oil, garlic, ginger and soy sauce - set aside
Grate & chop vegetables and noodles
Combine all ingredients in one big bowl with dipping sauce and lime juice and pepper.
Toss well and adjust taste as desired.
