Kelp Noodle & Shrimp Salad

Ingredients:

  • 1 cup peeled whole shrimp

  • 1 tablespoon sesame oil

  • 1 tablespoon chopped garlic and fresh ginger

  • 1 tablespoon soy sauce or coconut aminos 

  • Purple cabbage, grated about ½ cup

  • Carrots, grated about ½ cup

  • Kohlrabi, grated about ½ cup 

  • ½ cup cilantro, chopped 

  • 1-2 cup kelp noodles 

  • 2 Tablespoons Thai Peanut Dipping Sauce 

  • 2-3 tablespoon lime juice 

  • Pepper to taste 


Instructions:

  • Soak kelp noodles in warm water for about 10 minutes

  • Sauté shrimp with oil, garlic, ginger and soy sauce - set aside

  • Grate & chop vegetables and noodles

  • Combine all ingredients in one big bowl with dipping sauce and lime juice and pepper.

  • Toss well and adjust taste as desired.
