1 cup rolled oats
1 cup sunflower seeds
1 cup raw walnuts (or other nuts)
1 cup pitted dates (can mix with raisins or dried apricots)
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/8 cup water (optional)
Combine all ingredients in the food processor, pulse until well blended. Dough will be sticky.
Form balls with a small scooper.
Bake at 350 for 8 minutes. Makes about 24 cookies.
Store in an airtight container or freeze to enjoy later.
