Kitchari: Indian Rice & Lentil Stew

Ingredients:

  • ½ cup basmati rice

  • ½ cup mung dahl (you can substitute with red lentils) 

  • 1 tablespoon ghee

  • 1 cup vegetables like carrots, beets, zucchini, mushrooms

  • 2 cups water or broth

  • 1 tablespoon spice combination: cumin, ginger, turmeric, fennel, coriander

  • ¼ cup chopped basil or other fresh herbs 

  • Salt and pepper to taste


Instructions:

  • Heat pot and add ghee to melt

  • Add vegetables, stir for a few minutes

  • Add rice and lentils, spices and herbs, stir to combine well

  • Add broth

  • Cover to simmer for about 15-20 mins

  • Adjust liquid as desired (more if you like it to be more soupy)
