Ingredients:
1 kohlrabi
2 medium carrots
1 cup purple cabbage, thinly sliced
½ small onion, finely chopped
1-2 tablespoons parsley, chopped
1 tablespoon olive oil
1 tablespoon dijon mustard
1 tablespoon maple syrup
2 tablespoons mayonnaise
Juice of ½ lime or lemon (optional)
salt/pepper to taste
Instructions:
Peel and grate kohlrabi and carrots
Chop onion, parsley
Mix dressing ingredients in a salad bowl
Add all the vegetables, mix well
Salt and pepper to taste
You can make this slaw ahead of time, and refrigerate before serving
