Leeks and Greens on Toast


  • 1 medium leek, chopped

  • 3 cloves garlic, minced

  • 2-3 cups greens (chard, kale, beet greens), chopped

  • 1 tablespoon olive oil 

  • salt/pepper

  • Juice of 1 lime


  • Prepare vegetables - set aside

  • Heat oil in pan, add the leek

  • Cook until caramelized - salt and pepper 

  • Add greens and garlic

  • Saute until all wilted, squeeze lime juice on top 

  • Enjoy on top of a crusty piece of toast or as a side dish
