Leeks and Greens on Toast

Ingredients:
1 medium leek, chopped
3 cloves garlic, minced
2-3 cups greens (chard, kale, beet greens), chopped
1 tablespoon olive oilÂ
salt/pepper
Juice of 1 lime
Instructions:
Prepare vegetables - set aside
Heat oil in pan, add the leek
Cook until caramelized - salt and pepperÂ
Add greens and garlic
Saute until all wilted, squeeze lime juice on topÂ
Enjoy on top of a crusty piece of toast or as a side dish
