Ingredients:
3 pieces salmon fillets (about ¼ lb each) from Wild for Salmon
3 cups chopped vegetables in large chunks
3 tablespoons miso paste
3 tablespoons honey
3 tablespoons soy sauce (I used garlic coconut aminos)
3 tablespoons rice vinegar
2 cloves garlic & 1 inch fresh ginger, grated with a microplane
2 tablespoons sesame oil
1 tablespoon sesame seeds (optional)
Crushed black pepper (optional)
Instructions:
Preheat oven to 400F
Make the marinade with all the ingredients, mix well
Pour about half on the salmon fillet, set aside
Pour the other half of the marinade on the vegetables, toss well
Place everyone on a tin-foil lined pan
Roast in oven for 15-20 mins until the salmon is cooked, and the vegetables are cooked to your liking
Serve with rice, or enjoy just the fish and vegetables as a complete meal!
