Pad Thai with Shrimp

  • ½ onion, sliced

  • 2 cloves garlic, minced

  • 1-2 tablespoons vegetable oil 

  • 1-2 cups of vegetables like broccoli, zucchini, tomatoes, carrots

  • 1-2 tablespoons fresh basil, chopped

  • 2 eggs

  • 1 handful pad thai rice noodles 

  • 3 tablespoons Pad Thai sauce 

  • Fish sauce, black pepper to taste 

  • Peanuts and fresh cilantro to garnish


  • Pour hot water over pad thai noodles (or cook as instructed to al dente), set aside

  • Sauté onions and garlic in oil in pan 

  • Add vegetables, shrimp… then eggs. Stir them together.

  • Add fresh basil 

  • Add the rice noodles, use tongs to toss

  • Add fish sauce and pepper to taste

  • Sprinkle peanuts and fresh cilantro before serving 

Makes about 2 servings
