Pumpkin (Squash) Bread

Ingredients:

  • 1 can, 15 oz pumpkin puree or about 2 cups homemade

  • 2 eggs 

  • 2 tablespoons oil

  • ½ cup maple syrup

  • 1 teaspoon vanilla extract 

  • 1 teaspoon pumpkin spice

  • 1 teaspoon ground ginger

  • 2 1/2 cups flour (regular or gluten free)

  • 1  teaspoon baking soda

  • ½ teaspoon salt 

  • Chocolate chips (optional)


Instructions:

  • Preheat oven 350ºF

  • In a stand mixer, combine wet ingredients 

  • Add dry ingredients just to mix together

  • Pour batter into greased 9x5 loaf pan 

  • Bake for 50 minutes
