Roasted Beet salad

1 cup roasted beets, cut into cubes
1 cup cooked quinoa (or other grains like rice, couscous, farro)
½ cup blue cheese (feta or goat cheese can work well here, too)
½ cup parsley or cilantro, chopped
1 tablespoon olive oil
Lime or lemon juice, salt and pepper to taste
Combine all ingredients in a bowl
Serve as a side or a main dish with your favorite protein for a balanced meal.
