Roasted Beet salad

  • 1 cup roasted beets, cut into cubes

  • 1 cup cooked quinoa (or other grains like rice, couscous, farro)

  • ½ cup blue cheese (feta or goat cheese can work well here, too)

  • ½ cup parsley or cilantro, chopped

  • 1 tablespoon olive oil

  • Lime or lemon juice, salt and pepper to taste


  • Combine all ingredients in a bowl

  • Serve as a side or a main dish with your favorite protein for a balanced meal.
