
Ingredients:
Any vegetable you like!
Olive oil
Balsamic vinegar
Salt and pepper to taste
Instructions:
Preheat oven to 400ºF
Chop up your vegetables so they’re about the same size
Drizzle with olive oil and balsamic vinegar
Salt and pepper
Toss to coat evenly
Roast for 30 minutes
Eat as a side dish, add to salads, top your pizzas ... the possibilities are endless!
