Savory Bread Pudding


  • 2 cups old bread, cubed

  • 2-3 cups vegetables (I used zucchini, broccoli, mushrooms, onions), chopped

  • 2-3 roma tomatoes 

  • 1 tablespoon olive oil 

  • 8 eggs

  • 1 cup milk (regular or plant based)

  • 1 cup grated cheese (regular or plant based)

  • Salt and pepper to taste 


  • Grease baking dish (8x8 or 9x9)

  • Cover bottom of baking dish with bread cubes

  • Sauté vegetables in oil until soft

  • Layer vegetables over bread

  • Cut up tomatoes, place over vegetable layer

  • Mix eggs, milk and cheese, salt and pepper 

  • Pour over other ingredients in baking dish 

  • Cover dish, bake at 350ºF for 30 minutes 

  • Serve warm with a side salad and a dollop of salsa if you like
