1 tablespoon olive oil
1 tablespoon garlic and fresh ginger, chopped
½ cup onions, chopped
½ cup carrots, chopped
½ cup, celery, chopped
1 cup greens, chopped
½ cup sweet potato, cubed
½ cup cauliflower, chopped (optional)
½ cup diced canned tomatoes (optional)
1 jar Tikki Masala sauce
1-2 cups broth/water/coconut milk
1-2 cups seafood of your choice (cubed)
Salt/pepper to taste
Sauté all the vegetables in heated pan until soft
Add seafood pieces (fish, scallops, shrimp) to the sauce directly.
Stir to mix, and then put a lid on top and let simmer for at least 15 minutes
Serve over rice, and or naan bread!
