Sheet Pan Gnocchi


  • 2 packets of frozen potato gnocchi (serves 4-6 people)

  • 1 onion, roughly chopped

  • 2 pints cherry tomatoes

  • 1-2 cups broccoli (or any other vegetable)

  • Several cloves of garlic - I used 12-15!

  • Olive oil, salt, pepper, dried herbs

  • Fresh basil, grated parmesan cheese, red pepper flakes (all optional for garnish)


  • Preheat oven at 400F

  • Combine gnocchi (frozen is ok), onion, garlic, tomatoes, olive oil, salt and pepper in a bowl. Toss well.

  • Transfer to roasting pan

  • Roast for 30 mins

  • Transfer to serving bowl. Garnish with basil, cheese and red pepper flakes

  • Enjoy with crusty bread and a glass of wine!
