Ingredients:
2 packets of frozen potato gnocchi (serves 4-6 people)
1 onion, roughly chopped
2 pints cherry tomatoes
1-2 cups broccoli (or any other vegetable)
Several cloves of garlic - I used 12-15!
Olive oil, salt, pepper, dried herbs
Fresh basil, grated parmesan cheese, red pepper flakes (all optional for garnish)
Instructions:
Preheat oven at 400F
Combine gnocchi (frozen is ok), onion, garlic, tomatoes, olive oil, salt and pepper in a bowl. Toss well.
Transfer to roasting pan
Roast for 30 mins
Transfer to serving bowl. Garnish with basil, cheese and red pepper flakes
Enjoy with crusty bread and a glass of wine!
