Sheet Pan Gnocchi

Ingredients:
- 2 packets of frozen potato gnocchi (serves 4-6 people) 
- 1 onion, roughly chopped 
- 2 pints cherry tomatoes 
- 1-2 cups broccoli (or any other vegetable) 
- Several cloves of garlic - I used 12-15! 
- Olive oil, salt, pepper, dried herbs 
- Fresh basil, grated parmesan cheese, red pepper flakes (all optional for garnish) 
Instructions:
- Preheat oven at 400F 
- Combine gnocchi (frozen is ok), onion, garlic, tomatoes, olive oil, salt and pepper in a bowl. Toss well. 
- Transfer to roasting pan 
- Roast for 30 mins 
- Transfer to serving bowl. Garnish with basil, cheese and red pepper flakes 
- Enjoy with crusty bread and a glass of wine!
