2 cans of 15oz chickpeas, drained (reserve liquid)
1/3 cup chickpea liquid, or more, as needed
1/2 cup tahini
1/4 cup olive oil
Juice of 2 lemons
2 cloves garlic
1 tsp cumin (optional)
Salt and Pepper to taste
Combine everything except olive oil in a blender. Let blender run for about 30 seconds.
Slowly drizzle in olive oil until well blended.
Adjust consistency with chickpea liquid.
Adjust flavor with cumin, lemon juice, salt and pepper to your taste.
Great with pita bread, salad as a main dish or serve as a wholesome snack with cut up vegetables, crackers or dried apricots.
