Ingredients:
2 Tablespoons Olive Oil
1 small onion, chopped
3 cloves garlic, chopped
2 blocks firm or extra firm tofu
1 Tablespoon chili powder
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon ground paprika (optional)
1 teaspoon apple cider vinegar
Salt & pepper to taste
Cilantro and scallions for garnish
Instructions:
Heat oil in large skillet on medium heat
Add onion and garlic, sauté until soft
Add spices and mix in well
With your hands, crumble tofu blocks into very small pieces
Add vinegar, salt and pepper and mix well
Continue cooking, stirring and scraping the bottom of pan occasionally for 10-30 minutes depending on desired consistency. The longer it cooks, the denser the tofu will be
Garnish with cilantro and scallions
Assemble as taco with all your favorite accompaniments (sour cream, guacamole, salsa, hot sauce, etc).
