Tofu Chorizo

Ingredients:


  • 2 Tablespoons Olive Oil 

  • 1 small onion, chopped 

  • 3 cloves garlic, chopped

  • 2 blocks firm or extra firm tofu

  • 1 Tablespoon chili powder

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground cumin

  • 1 teaspoon ground paprika (optional)

  • 1 teaspoon apple cider vinegar

  • Salt & pepper to taste

  • Cilantro and scallions for garnish


Instructions: 


  • Heat oil in large skillet on medium heat

  • Add onion and garlic, sauté until soft

  • Add spices and mix in well

  • With your hands, crumble tofu blocks into very small pieces

  • Add vinegar, salt and pepper and mix well

  • Continue cooking, stirring and scraping the bottom of pan occasionally for 10-30 minutes depending on desired consistency. The longer it cooks, the denser the tofu will be

  • Garnish with cilantro and scallions 

  • Assemble as taco with all your favorite accompaniments (sour cream, guacamole, salsa, hot sauce, etc).
