Vegetarian Pozole

Ingredients:


  • 1 tablespoon olive oil

  • ½ cup onion, chopped

  • ½ cup celery, chopped

  • ½ cup carrot, chopped

  • 1 can hominy

  • 1 can white bean

  • 1 jar Hatch Green Chile

  • salt/pepper to taste

  • 1 teaspoon ground cumin

  • 1 teaspoon chipotle powder

  • ½ cup cilantro, chopped

  • 1-2 cups vegetable broth


Instructions:

  • Heat veggies with oil in pot

  • Add hominy, beans, spices

  • Saute until vegetables are soft

  • Add broth, cilantro

  • Cover to simmer for 20-30 minutes

  • Garnish with sliced avocado, radish, sour cream as desired
