White Beans & Tomato Salad

Ingredients:
- 1 cup dried Rancho Gordo white beans (Cassoulet or Aroyo Blanco), soaked over night, and slow cooked or pressure cooked (instant pot) until soft 
- 3 cloves garlic 
- ½ cup chopped onion 
- Salt/ Pepper 
- 1 tablespoon olive oil 
- 2 cups tomatoes, chopped 
- ½ cup fresh basil and parsley, chopped 
- Grated parmesan cheese, optional 
Instructions:
- Sauté garlic, onions in hot oil, add beans, stir until warm 
- Put chopped tomatoes and herbs on a serving plate 
- Pour the warm beans over the tomatoes 
- Salt and pepper to taste 
- Sprinkle with grated parmesan if desired
