Wild Ramp Chimichurri & Pesto



Ingredients for Chimichurri

  • 1 cup ramp, chopped (bulb and greens)

  • 1 cup greens, like arugula, or basil/parsley/cilantro

  • Juice of one lemon

  • 2 tablespoons olive oil

  • A little water to your desired consistency

  • Salt and pepper to taste

Ingredients for Chimichurri

  • 1 cup ramp, chopped (bulb and greens)

  • 1 cup greens, like arugula, or basil/parsley/cilantro

  • Juice of one lemon

  • ½ cup nuts

  • ½ cup grated parmesan cheese

  • 2 tablespoons olive oil

  • A little water to your desired consistency

  • Salt and pepper to taste

Instructions:

  • Combine all ingredients in a food processor

  • Pulse until desired consistency

  • Add lentils, then broth. Bring to a simmer, then partially cover the pot and turn heat to medium-low.
