Zucchini Spaghetti (Spaghetti alla nerano)

Ingredients:
- 3 medium zucchinis, diced into rounds, about 1 inch thick 
- ½ onion, roughly chopped 
- Several cloves of garlic - I used 12-15! 
- Olive oil 
- 1-2 tablespoons butter 
- 1 cup provolone cheese, grated 
- 1 cup parmesan cheese, grated 
- 1 lb spaghetti 
- salt/pepper to taste 
- Fresh basil 
- Red pepper flakes optional 
Instructions:
- Preheat oven at 400F 
- Prepare zucchini, onion, garlic. Toss them in olive oil, salt and pepper and lay flat on baking sheet 
- Roast for 20-30 mins or until zucchinis are nicely brown 
- Half way through the roasting, bring pasta water to boil 
- Cook spaghetti to al dente. Reserve some pasta water 
- Heat oil and butter in a big pan. Add veggies, then spaghetti. Toss with cheeses, basil, salt and pepper. Garnish with more basil and red pepper
