Recipe Adapted from the Joy of Cooking
Ingredients:
1 cup chunky applesauce (homemade is best!)
½ teaspoon salt
½ teaspoon ground ginger
¼ ground mace and ground clove
1 teaspoon ground cinnamon
½ cup sugar
⅓ cup brown sugar
1 egg
1 teaspoon baking soda
½ cup room temp butter
1 ½ cup flour
¼ cup dried cranberries or raisins (optional)
Instructions:
Make your own apple sauce, or store bought is okay (it won’t be chunky)
Preheat oven at 350ºF
Mix all ingredients in a big bowl, wet ingredients first. Don’t over mix
Pour batter into baking loaf pan (I like this one)
Bake at 350ºF for an hour
Let cool and enjoy with tea or coffee!
