Bean Chili

Ingredients:

  • ½ cup onions, chopped

  • ¼ cup celery, chopped

  • ¼ cup carrots, chopped

  • 2 cups beans, cooked

  • 1 cup canned diced tomatoes

  • 1 medium zucchini, diced

  • 1 cup salsa (whatever you like)

  • 1 teaspoon each of ground cumin, ground coriander, chipotle powder 

  • Salt and pepper to taste

  • Water or broth as needed

  • Fresh cilantro, cheese, sour cream, avocado for topping


Instructions:

  • Heat oil in pot (instant pot if you have it - set to sauté function)

  • Sauté onions, celery and carrots together until soft

  • Add the rest of ingredients, stir

  • Add water just enough to submerge all ingredients

  • Close lid, change Instant Pot function to slow cook, or simmer on stove top for at least 30 minutes.
