Corn, Tomato, Zucchini Side Dish

Ingredients:

  • 1 cup corn kernels (fresh or frozen)

  • 1 medium zucchini, cubed

  • 1 cup cherry tomatoes 

  • ¼ onion, chopped

  • 1 teaspoon garlic, chopped

  • ½ jalapeno pepper, chopped (optional)

  • 1 tablespoon olive oil

  • Fresh herbs like basil, parsley, cilantro, chopped

  • Salt, pepper to taste


Instructions:

  • Prepare all the vegetables

  • Heat oil in pan

  • Sauté onion, garlic and jalapeno pepper until soft

  • Add other veggies

  • Remove from heat when zucchini is soft, transfer to serving plate

  • Sprinkle with cheese, herbs, salt and pepper
