Ingredients:
4 medium-sized beets
2 navel oranges
2 OUNCES feta cheese, crumbled
¼ cup fresh basil leaves
Ingredients for the vinaigrette
¼ cup fresh orange juice
1 tablespoon fresh orange zest
1 tablespoon balsamic vinegar
1 teaspoon honey
¼ teaspoon salt
2 tablespoons olive oil
freshly ground black pepper
Instructions:
Cook the beets, peel and slice into 1 inch rounds
Peel and slice oranges into 1 inch rounds
Chop basil leaves
Crumble feta cheese
Make the vinaigrette
Assemble salad
Pour dressing over and serve
Can be made a few hours ahead of time and chill in refrigerator!
