Quick Tofu Scramble


  • 2 tablespoons olive oil 

  • ¼ cup onion, diced

  • 1-2 cups vegetables (like kale, zucchini, mushrooms, etc)

  • 1 cup firm tofu, cubed

  • 2 teaspoons ground turmeric 

  • Salt and pepper to taste 


  • Heat oil in a heated pan, add onion and sauté until translucent. 

  • Add vegetables & ground turmeric

  • Sauté 1-2 mins 

  • Add tofu and stir. Use a potato masher to break it up, if desired. 

  • Salt and pepper to taste

Excellent served on toast!
