Ingredients:
2 tablespoons olive oil
¼ cup onion, diced
1-2 cups vegetables (like kale, zucchini, mushrooms, etc)
1 cup firm tofu, cubed
2 teaspoons ground turmeric
Salt and pepper to taste
Instructions:
Heat oil in a heated pan, add onion and sauté until translucent.
Add vegetables & ground turmeric
Sauté 1-2 mins
Add tofu and stir. Use a potato masher to break it up, if desired.
Salt and pepper to taste
Excellent served on toast!
