Simple Green Soup

  • 1 tablespoon olive oil

  • ¼ cup onion, chopped

  • 3-4 cloves garlic, minced

  • 1-2 tablespoons fresh ginger, minced (optional)

  • 3-4 cups green vegetables like celery, spinach, broccoli, chard, zucchini

  • 4 cups broth

  • salt/pepper to taste


  • Heat oil in pot

  • Add onion, garlic, ginger, salt and pepper. Saute until onions are translucent

  • Add veggies and broth

  • Cover to simmer until all veggies are soft

  • Blend until smooth using a food blender or a hand immersion blender

  • Garnish with seeds, herbs, sour cream, or on its own

  • Enjoy with bread, cheese, or again, on its own!
